This is probably one of the most versatile recipe butters that I have found and liked on a variety of things. Having guests over for dinner? Go the extra mile and whip up this simple recipe to serve with steaks, beef, or as a spread to enhance your favorite garlic bread recipe. Sometimes I cheat…I use the frozen stuff and prior to putting in the oven I spread a little of this butter on top…wow…it’s amazing! Here’s the recipe:
Ingredients:
2 sticks of unsalted butter, cubed and softened
1/2 lb crumbled bleu cheese (about 2 containers if purchasing it in the plastic tubs)
1/2 cup chives, chopped or 1/4 cup dried (no chives? use about 1/4 cup of finely chopped onion)
1/4 teaspoon of salt (can be omitted if you like, the blue cheese is salty enough!)
Directions: Place all ingredients in the bowl of a food processor and pulse until well incorporated. Using a spatula, place the butter into a storage container. Scoop 1-2 tbs. of butter on steaks prior to removing from grill or serve on the side. Keep remaining butter in the refrigerator for future use.
