Feta cheese is one of my a favorite cheeses to garnish everyday meals to give a boring recipe a bit more zing! I normally purchase the crumbled variety and sprinkle it on salads, chicken, or steaks right after they come off of the grill…instant gourmet! But my friend Barbara Hranilovich sends this unique recipe that puts the feta “front and center” as the main ingredient to this hearty and creative appetizer. It just sounds so fabulous! I will be trying this one very soon! Let the recipe begin!
Sesame Feta Appetizer
Adapted from Deborah Madison’s
Ingredients and Directions:
-8-ounce block of Feta – cut into two 1/2″ slabs.
(If too salty, soak 20 minutes in cold water)
-Spoon 1 1/2 T each of butter and olive oil in a wide skillet
-Toss in two bay leaves
-Heat over medium till you can smell the bay
-Add the feta slabs
-Season with pepper and let heat till soft and starting to bubble
-Carefully turn over and cook one more minute
-3 T fresh lemon juice – add to skillet
-Move Feta, along with tasty crusty bits, to a serving plate
-Sprinkle lightly with ground oregano or marjoram (or 2 t fresh, chopped)
-Sprinkle with 1 T toasted sesame seeds
-Serve with fresh bread as appetizer or with a salad
